How to make red velvet cheesecake brownie bites
Hello and welcome back to In the Kitchen with Matt, I am your host Matt Taylor, today I
am going to show you how to make red velvet cheesecake brownie bites, mmm yummy.
These are a perfect little treat for Valentine's Day, or any time.

Back to the recipe, this recipe is really easy to make, if I can do it, you can do it.
Let's get baking.
First let's go ahead and preheat the oven to 350 degrees F or 176 C. Now let's go ahead
and add our dry ingredients, down below in the description I am going to have all the
ingredients listed as well as the amounts, ? cup of flour, one fourth cup of unsweetened
cocoa powder, 1 eight tsp. of salt, 1 cup of white granulated sugar, now with a whisk
let's go ahead and whisk this all together, and break up some of these clumps from the
cocoa powder.
Or you can sift these all together if you like.
And now what we want to do is we want to add our butter, I just melted 8 tablespoons its
about 113 grams, of butter, and I melted it in the microwave, let's go ahead and put that
in there, and with a wooden spoon, let's come in and stir this with a wooden spoon here.
All right and also at this point let's go ahead and add our food coloring, we want about
a tablespoon, so I am just going to start with several drops here, and see where we
can get.
What we want to do is we want to add our vinegar, one half tsp. of vinegar, and then what we
want to do is we want to come over with our eggs and beat these up.
Back to our brownie mix, and our vanilla extract.
After which we are going to add more food coloring, okay?
The color is starting to come out.
All right and then we just keep adding food coloring until, we get it to look like this,
nice a nice dark red color, perfect.
Let's go ahead and set this aside, and now we want to our cream cheese, and if you forget
to take it out of the refrigerator, and it is still cold, go ahead and just put it in
the microwave, and set it on half power, and then do like 20 seconds, 15 seconds, 20 seconds,
and then when you push on it with your finger it will be nice and soft, 3 tablespoons of
sugar to this.
Let's cream these together.
All right and then at this point let's go ahead and add our vanilla extract, one half
teaspoon, and our 1 egg yolk.
And then come in here and scrape the sides.
All right and now let's go ahead and take a plastic bag or a piping bag and put it over
a jar or a glass, and let's go ahead and get our cream cheese filling, in there, go ahead
and take this up like that, and now you got a nice little piping bag.
Now what we want to do is we want to take like a tablespoon, a little bit less then
a tablespoon, and we are going to go ahead and scoop out some of the mix, and just put
it right there, then with our cream cheese let's snip the top off, we will put it on
top, and then come back here with a little bit more and then put it like on top, and
then you can come here and move it around with your toothpick and just twirl it, like
that, that is one way to do it.
Another way is to put less in there, I forgot to mention you want to spray your little muffin
pan, with cooking spray, is you can pipe some cream cheese in there, and instead of you
know moving it around, you just put a little clump there on the middle, and it will move
out by itself.
So go ahead and fill up all these, you are pretty much just sandwiching your cream cheese
in the middle of you two layers and then if you want you can twirl it around with a toothpick,
another method that you can do is you can just take your piping bag and poke it right
in your brownie mix and just pipe some and it will raise it up like that.
And we are going to go ahead and bake these in the oven 350 like I mentioned for 10 to
12 minutes, and then they will be ready to go, and when you poke a toothpick in it they
should come out clean.
All right when they come out of the oven the will look like this, go ahead and let them
cool for 5 minutes before taking them out and letting them cool on a rack, until they
cool completely.
All right the red velvet cheesecake brownie bites are done, they turned out amazing, really
easy to do, if I can do it, you can do it, go out there and make your own.
