Welcome back for today's episode, where we're gonna be making Anna Blanca's favorite ice
cream.
- I mean I go through periods and my chocolate and anything and I hit this amazing rocky
road cheesecake ice cream place and I can't get out of it.
Every time he asks me what to make, 'cause he's the house blender chef, he's amazing.
He asks me what I want for dinner and I want this cheesecake ice cream now for months and
months.
- Yeah, you're unstoppable.
- So good, I can't help it.
And it's, okay, let's start.
Ooh let's start with the ten pieces of ice.
- Yep, so we've got ten pieces of--
- Filtered water.
- Purified ice.
- Yes, if you have spring water, you can't do better than that, right?
- Even better.
- Even better.

- Yeah, in Santa Barbara or Ojai or FindASpring.com, find one near you.
- Yes, fantastic.
And we were in Canada, that's where we were making ice cream from spring water.
Anyhow, and here is my favorite cashew cheese.
This is going to be vegan, right?
Yes.
- Yeah, could be.
- Well vegan apart from the--
- Well there's gonna be different ways to do it.
- Alright.

- Would you like to scoop it out honey?
- Sure, so here we have cashew cheese.
We're gonna put this whole thing.
So this is gonna be six ounces of cashew cheese.
You could do it with probably three, but we're gonna go the ultra decadent route, 'cause
as Anna Blanca says, because why not?
- Because why not?
- Now of course, you could ferment the cashew cheese on your own at home if you have more
time, but if you're pressed for time and you just wanna do this quickly, you can get cashew
cheese--
- There's so many amazing ones available now.
We always experiment.
Alright, next one is hemp seed or as they call it, hemp hearts.
I like to call them hemp hearts.
- You like that name?
- Yeah.
- I think it's a little silly.
- Really?
- It is, but you like it.
- I like it.
And you know, there are some pieces that look like hearts.
Come on, can you see?
- Yeah, but then some people ask, what's the difference between hemp hearts and hemp seeds?
And I have to say, they're just the same thing.
It's just a name.
- Alright, alright, alright.
I give on this one.
- So hemp seeds, you call 'em hemp hearts.
- Hemp hearts.
- Is a complete protein, really great essential fatty acid blend, and really good for making
this nice and creamy.
And the cashew cheese is also gonna really help give it a great texture.
- Exactly, yeah.
And essential fatty acids, omega-3 is so important for inflammation as well.
- That's right.
- Alright, now we are going with this very wonderful non-GMO lecithin.
- Correct.
So you wanna make sure your lecithin is both non-GMO and free from solvents like hexane
and methane that are leftover from the processing of most lecithin products.
- It's not only delicious, it's great brain food.
- Yep, amazing for the brain.
- Get the nugget kicking away and ticking away.
- Most people call it a noggin.
- I know but I call it nugget because it makes more sense.

Oh should we put some probiotics in there too?
- So the probiotic aspect of this is actually that cashew cheese which has been fermenting
so it's already probiotic.
- That's good.
Should we put a Bio-K in there?
- Do you have one?
- I have one.
- Okay, go get it.
- I'm gonna go and bring the Bio-K because I think it will be fantastic.
In the meantime, let's try to identify these things because I don't know what they are.
- So first here, we have gelatinized maca.
This is an aphrodisiac, it's great for supporting the thyroid, it improves athletic performance,
it's great for helping you adapt to high altitudes if you're in that kind of a location.
- I'm back.
- And like lucuma, it's also an emulsifier, so it's gonna give great texture here.
And we used gelatinized maca rather than raw maca because it has had the starches broken
down so it's easier to digest.
It doesn't cause the flatulence you sometimes get from raw maca.
- That's a very nice word you used in there.
- Flatulence?
- Yes.
- It's very polite.
- It's a very polite way
- It's gentle.
- to explain what would happen.
Okay, what is this?
- It doesn't cause you to produce the aromatic essences that raw maca does.
-Especially good if you're going on a sexy date.
- Exactly.
- Is this one let me see, astragalus?
- This is astragalus.
- Astragalus.
- So the cheesecake flavor is very gentle, you can't put some more of the more intense
flavor herbs like ashwagandha or reishi in there, you have to use the more gentle flavored
ones.
So astragalus is a qi-tonic it proves moment to moment energy, vitality and cognitive function.
It has a very gentle, kind of like graham-crackery, vanilla, caramel flavor to it.
- Now you're putting some
- It won't get in the way of what we're trying to create here.
- Exactly.
So let's put like half of this.
You know Bio-K has all-- they have rice-based or dairy-based so it depends what your preference
is, dietary preference.
- Alright, now we're gonna sweeten this up.
- Should I put some ghee in there?
- Yeah, we shall, but we're gonna sweeten it first.
- Let's sweeten it first.
I like when you sweeten things.
- I'm just focusing here on getting the right amount of drops.
So we got 20 drops of stevia.
- So practiced--
- The Stevia is really nice because it doesn't have the bitter aftertaste that a lot of Stevia
products have.
A lot of people say, "Oh, I don't like stevia," but that just because they've had a really
crappy stevia.
You owe it to yourself to at least try once the Omica stevia because I think you'll find
it really to be a superior product.
- Yeah, I use it all the time.
It's my favorite.
- So we have ghee going in here.
It's a brain food.
Your options are many.
You could make this a totally vegan ice cream.
You could use almond butter, you could use just the cashew cheese, you could just forgo
the oil entirely and just use that cashew cheese that's in there.
That would be more than enough to cream it up, but we're going for the healthy hormone
benefits and the brain benefits of this ghee.

It doesn't really work because if you try to blend this without the top of the blender,
you're gonna smash this up and that has happened to so many people and the worst part is not
that you just break a piece of the blender, but that you're whole ice cream is ruined
because you're gonna have shards of plastic going throughout your ice cream and throughout
the blender and plastic is not good for your health.
Even if it's BPA-free plastic, you don't want to eat it.
It's not a super food, it's not a health food, and it's not even a tonic herb.
