Hello everyone.

Let's see how to make traditional Sicilian bread.

Durum wheat flour, mother yeast, salt and knead.

Use hot water.

I am using a large quantity of flour to show you how this bread was traditionally made.

Bread had to last a couple of weeks or more back in the days.

This is a traditional Sicilian kneading table known as "briula".

You just had to place the dough at the center and knead using the handle.

You may need a second person depending on the quantity of dough.

The dough is now extremely soft.

Divide the dough (each part = 500 g / 17.5 oz).

Housewives shaped this bread in a lot of different ways.

Here are a couple of ideas.

Leave to rise for 2-4 hours.

Cover and wait.

After 2-4 hours, it is time to bake.

Here is our baked bread (190 °C / 370 °F for about 1 hour).

The crumb has a compact texture.

This bread is relatively hard.

This is a 2 weeks old bread slice.

It can be eaten with a soup or as breakfast with plant-based milk.

You can make this bread with your usual kneading technique if you want.

Well, here in the studio with us this morning is Monica Pappas with Fingerprinting Express.

You guys are celebrating a new grand opening of your fourth location here in the Valley.

It's our fourth location statewide, we opened last week for business over on East Flamingo

and Maryland.

Okay, okay. Then it would then be the second one here in the valley? Yes. The second one

here in Las Vegas. The fourth statewide, still something to celebrate.

It is, it's very exciting. We really love what we do. We hold a lot of hands, we help

a lot of people.

I can imagine. Now, for everyone at home that hasn't been over to Fingerprinting Express,

what do you want to tell them about your business?

Fingerprinting Express does more than just fingerprint background checks. We also always

have a notary public available, we do passport photos, and we also do secure document shredding.

We have a Culture to Care™. We discount our fees for teachers, non-profit, active

military. And we discounted over $60,000 in the last two years of fingerprint fees.

So we really want to encourage people to volunteer, get out in the community, and get involved.

And we know that obviously, especially when you're speaking to background checks and you're

thinking maybe it would be more official business when you're going out for a job.

But anyone at home can come in and make sure, I know, I'm thinking of families. I was a

babysitter when I was younger and that was something that, when I was going for that

gig that I'd be able to show mom and dad, or the mom and dad would make sure I did that

myself.

Absolutely. There are different kinds of background checks.

There's name and date of birth background checks, and fingerprint background checks

have that biometric data attached to it. So no matter what ails someone has been using,

the crime will show up through a fingerprint background check.

So that's why it's required by law for several categories here in the Valley.

And anyone can come in and take advantage of the services?

Yes. We do have our FBI Express system with a 24-hour turn around time. Which is really

fast. So you can get your own FBI criminal history report within 24-hours.

And this may seem like a silly question, but why do you think that it's important to add

in those discounts thinking of those who are giving back throughout our community?

Well, we want to make it convenient and fast, but we also want to make it affordable so

that people don't use that as an excuse not to get involved.

People are in and out of our office within minutes and we want to keep the fees as low

as we possibly can so that people are encouraged to volunteer and get out there in the community.
