This time, Persian Iranian cuisine.
But before that, I'm sure you'd want to check out the behind-the-scene!

Let's meet Chef Sebastian Oveysi right here,
the master behind Amoo's Restaurant!
Are we ready?
Absolutely!
Let's come on it and show you around!
She's toasting our bread.
We cook it half-way.
When they're ready to be served, we throw it to the stove top and bake it one last time,
just to keep it that crispy, fresh texture.
So this is where we grill all of our kebabs here.
As of right now, as you're seeing, we're actually getting ready for a large catering
order that is going to be picked up very soon.
So the kitchen is pretty caught up doing that.
That is our expedition line in which we expedite all of our dining and carry-out orders.
We have the restaurant, we have a food truck, and we also have a catering business,
caters to pretty much the Washington DC metro area.
Okay, this is awesome!
So this is one of our Autumn and Winter seasonal items.
It's a beets salad.
This is actually a warm salad.
I got the other two items as well.
So this item right here, another seasonal item, which we call Kadoo.
Kadoo in Persion means squash or pumpkin.
We have about 8 choices of stews that people can choose from.
And we stuff it inside the acorn squash.
Okay, this item right here is the Chimichurri Lamb Kebab.
As many people know that Chimichurri is not a Persian sauce.
It's not a Persian recipe.
It's actually an Argentinian sauce that is used to grill meat with,
to marinate chicken or fish.
So I thought it'd be very creative to actually serve our lamb that is marinated with
Chimichurri sauce in a form of a kebab.
Cooking aspect of it is Iranian, but the sauce itself, not so much, it's Argentinian.
Come on now, I can carry all those plates!
Mmm…
I can taste a little bit of everything.
There's early grey in there.
I can taste definitely rose water, very slight flavor of lavender.
This is so warming and so calming, I just love it.
And look at how cute this spoon is!
So this is Laboo, a warm salad that is only available from September through February.
Sort of a Fall dish, and this is served warm.
It's basically roasted beets cooked for a very long time, mixed with
pomegranate basil sauce, and topped with some goat feta cheese.
I can't wait to dig in!

Ooooh, look at that sauce, it looks so juicy, and super red and purple.
Let me put some more cheese on it.
Mmm… look at that!
Usually, I don't prefer salad with beets because it's a little bit… it's a pretty
strong flavor and it's a little bit bitter.
But this beet is super sweet and so juicy.
I just love how they marinated it and how they seasoned this.
My husband, his first reaction to it was like…
Ooohh this is like much more sour than he thought, and then he just kept trying, second
and third bite, and he really liked it actually because it doesn't taste very raw or bitter.
And this is very tender, soft, and mostly sweet, and just tiny bit of sourness.
So I think if you don't generally like beets, don't be afraid to try this.
We were really surprised, we actually really like this!
Mmm… yeah
Definitely try this!
The second entrée we got here is the Kadoo.
Kadoo itself means acorn squash and stuffed with any type of stew you'd like to choose.
Here we got the lamb shank which is cooked for a very very long time.
It's actually braised.
And the lamb itself is seasoned with garlic and vine tomato sauce.
Let me try the lamb, the main character of this dish!
Oh I may have to cut it up a little bit…
Oooh look at that fatty part, all the collagen part, so juicy!
look at this!
This is incredibly… tender!
It's so nicely seasoned and it's super juicy, hearty, it's so filling.
It's perfect for the fall.
Let me try a little bit of that squash too.
Oooh... look at that squash, oh it's almost like spaghetti squash actually!
Mmm… it's sweet.
It really balances out the meat so well because the lamb has a pretty strong flavor, and then
the seasoning is quite strong as well, but when you eat it together with the acorn squash,
it just sort of balances it out.
Almost like rice on the side.
Don't miss this, especially when you come here on a fall or winter day.

Really tender, the lamb, oh my gosh!
So this beautiful flower right here, I saw one of the Yelp reviews that this is edible,
I just wanted to confirm that this is true?
Yes, it is! These are edible orchids.
The hydroponic greenhouse where we get all our produce from.
They actually grow these orchids and microgreens for us to our specification.
We use all non-GMO seeds.
We go back and forth between the daisies, the Spanish orchids, or the edible lilies.
Those are all like… throughout the year we change our flowers depending on the season.
But yes, all of our flowers and all of our microgreens are edible.
So you can basically eat everything off of your plate.
Actually, you can actually eat that with the stem.
It doesn't have a lot of taste to it, the texture is very very similar to romaine lettuce,
but it's full of antioxidant.
Wow I did not know this at all, definitely learned something today.
And this flower, for the antioxidant, I'm definitely eating this!
Yup like he said, it's fresh and crisp, like a lettuce, like a romaine salad lettuce.
This is Chimichurri Lamb, this is definitely a fusion dish because
Chimichurri is an Argentinian sauce
that is commonly used over there, which is not Persian, but the way they cook this
lamb is in kebab style, which is Persian style, and so this is a fusion dish.
I can't wait to just dig in right now.
Mmm…
It's slightly...
spicy actually.
It's almost like curry flavor, oh this is so good!
So flavorful and it's not too salty because sometimes kebabs can get really salty.
This is amazing, guys!
Not only does it look good, but it also tastes awesome!
Let me cut up the tomato too.
Wow look at that.
Nice and juicy, look at that tomato slice right here.
Mmm…
I thought this was just grilled raw, but I think the tomato even is seasoned.
So good!
Mmm… look at the rice!
Another bite of my lamb kebab.
I love the herb that is used here.
I know what it is!
It's green chili pepper.
That's why it's spicy!
A little bit of like… jalapeno, that kind of spiciness to it.
This is good.
I love meat that's spicy, so this is awesome.
Highly recommended!
Can you tell us a little bit about the background of Amoo's restaurant, how did this all come
together, and the inspiration behind why you wanted to do fusion cuisines?
I grew up in the restaurant business.
My family had a kebab carry-out place.
So when I turned 18, I knew that I want to be in the restaurant business.
So I moved to New York City, a popular Italian restaurant in downtown Manhattan,
and I worked my way up, from being a line cook to head chef,
and eventually I became the executive chef.
I wanted to change seeds a little bit.
I moved down to South Beach, Miami.
And I got a job in another Italian restaurant that has a little bit of French influence as well
One day, I realized with all the experience that I have in Italian and French cuisine,
it'd be a really cool idea to collaborate that Western European or American cuisine
with the Iranian cuisine.
So I moved back, and got involved with my father and my sister, and we opened up Amoo's.
Initially, when I was telling people that this is the concept we were going to go with,
you know, most of them were like, wait a minute, this is Persian cuisine, don't mess with it.
I don't think it's going to work.
But I kept pushing for it.
And once people tried the food, they fell in love.
I'm just very happy, and I feel very lucky.
So I noticed that a lot of the Persian cuisine involves using pomegranate juice,
pomegranate syrup, can you tell us a little bit about that?
Persian cuisine uses a lot of fruits.
In most cases, they use a lot of dried, sun-dried fruits.
The idea of marinating meats in pomegranate is been part of the Persian tradition
for many many years.
There are so many dishes that are made with pomegranate.
Like I said, it's one of the ingredients that… people say
you're not Persian if you don't like pomegranate.
So yeah!
It's amazing!

Look at how busy this place is on a Saturday afternoon.
It's already 2:50, which is almost 3, not lunch time, but this place is almost packed.
And today is a pretty snowy day, so people still come out here and eat.
They're so busy.
Chef Seb's just running around, he takes orders, he runs to the kitchen, he serves,
he does everything with a passion.
He really sets an example to his staff members, so all of the staff here are
just very patient to every customer.
You don't see this in every restaurant out here, but this is all we want to see in
family-run restaurants, to feel welcomed, to feel at-home while dining here.
This is great!
You don't get this everywhere!

I really love that ice cream.
It's not super sweet.
I can taste a slight rose flavor in it and I love the chewy texture from the cherry,
added a little bit of sourness to it too.
And so really big shout-out to our Yelper friends because they recommended not only
this restaurant, but also this ice cream to make sure to try.
So yeah you guys who have never been to this restaurant, even though you get a stuffed
belly in the end, make sure to try this saffron ice cream before you go.
Also, the ice cream recipe is passed down from the chef's mom.
So the extra honey flavor in it, you can't really find it from any other saffron ice creams,
but like the chef said, the saffron ice cream has a lot of different variations.
This one is really homemade, you can't find it anywhere else because it's a special recipe,
plus they make it here at the restaurant, not store-bought.
So if you get to come here, make sure you try this ice cream!

Oooh so cold!
It was an amazing experience even though it feels so cold out here, we warmed out tummy
with the delicious food, and really felt welcomed and warm inside the restaurant
because of their excellent customer service!
