First of all I'd like to wish you a very happy new year 2019
who say new year, say that you were watching your clock at 23h59 on the 31st
so today in this new video I decided to show you how to make a chocolate clock
it's not the kind of tutorial that you often find on YouTube, but if find the idea very nice and I wanted to share it with you
no need to have a special mould, just a little imagination
I pull on my apron and I show you the recipe
first I make the gelatin mould to make the roman numeral and the clock hands
I found roman numeral and hands in ZODIO stores
I paste them with a little amount of melted chocolate
then I'll pour the gelatin-sugar-water mix on it
you can find the tutorial to make the gelatin mould on my channel I put the link in description box
once it's pasted, I pour the mix over the roman numeral and hands to make the imprints
if there are some air bubbles, you have to pierce them with toothpick
if it doesn't work with the toothpick you can try with blowtorch
when it's all moulded I let it cool down and I'll be able to carry on
when it's coold I cut the excess that I melt again in my pot
and I pour it again over the first one
and I pour the excess aside
I let cool down again
when it's all cold I cut the gelatin around
I keep the excess
I'm going tu cut the gears
I use flower cookie cutters
that's why I keep the excess
and I cut the gelatin
just by pressing
I cut different sizes
and what I do with the bigger one
I cut in order to make it look more like a gear
when the gears are cut, I unstick the other part with the roman numeral
I put it upside down and I remove the roman numerals carefully
to keep the mould shapes
if it's quite difficult
you can cut around with a knife
do not hesitate to cut the inside of the roman numerals
when all is removed, it's a bit tedious, I just have to temper some chocolate and pour it in the imprints
to make the gears, roman numerals and hands
I place my gelatin moulds on a PVC sheet
I tempered some dark chocolate, you can find a tutorial
at the beginning of my channel
I make a cornet but you can also use a piping bag
I pour in my cornet
I make a little hole at the end
and then
I pipe inside the mould
trying to pipe close to the mould
I start by making row after row
and then I carry on
for the hands
I pipe again on the first layer
I let some relief for the hands
for the bigger gears I do it with the spoon
in the same way
I scrape
when it's done I pour the rest
on the PVC sheet
in order to make the 16 cm in dimeter disc
I spread the chocolate with my palette knife
to have a thin layer
and to finish I pour the chocolate in a pastry bag tip
I make it flat
before it crystallize I cut a 16 cm disc
and I cover it with a book
in order to remain flat
and I let crystallize
when it hard I start to unstick the roman numerals
so the ONE
carefully
for the hands I unstick
with a knife
I lift the hand
slowly
it's quite fragile
I also unstick
my disc
carefully
I have now all the elements to make the clock
I also have this
I melt it with blowtorch
I make it smooth with my fingers
I let it crystallize as weel
once I get all the elements I start decorating
so what was in the tip
I cut it with a knife and I leveled it with the help of a heated pot bottom
so I have a flat surface that i'll put in the center
I start by gilding the roman numerals
carefully
when it's done In carry on with the gears
as you can see I made some holes with my thermometer and a heated tip
to make then realistic
I make them on a tray to spray them with a cooper pearly effect
available at ZODIO stores
I do this over my sink to keep my counter clean
once it's done
I can start to assemble the clock
for the assembly I temper chocolate once again that I put in a cornet or in a piping bag
I shaped the gears pattern the way I want them to be
I cut the top of my piping bag
and I pipe a point of chocolate
at the junction
I let it crystallize
when they are joined together I put them upside down
I fortify underneath
what is not visible
I let it crystallize once again
to have something resistant
I also paste the three once together
I also paste the hands
I cover the center with a chocolate goldened pistole
I let crystallize
I try to find the center of gravity
of the structure
I put some chocolate on the base
and I set it all
make it with what you have to hand
and I let crystallize
when it's crystallized I leave it aside
I take back the chocolate disc
and I stick
the roman numerals
with a jot of chocolate
this new tutorial about the chocolate clock is now over. I hope you learnt new technics
especially the gelatin mould
it's not a difficult task but you need some time to do it
at a very low price because you make the mould
you can keep the clock quite a long time in a airtight box away from heat
