Hi guys ! welcome to "les plaisirs sucrés d'Antoine"

today in this new video I decided to work with apples

which is a seasonal fruit to make a Tarte TATIN

It's the perfect season to eat it with its caramelized apples

set on a puff pastry disc

that I brighten up with milk jam

it is a gourmet tart so I pull on my apron and I show you how to make it

I start the recipe by making the puff pastry

you'll need these first ingredients

10 g of icing sugar and 350 g of puff pastry

I choose a fast and easy puff pastry, you can find the tuto on my channel

I put the link in description box

I simply roll out the pastry on a flour dusted baking mat

into 5 mm thickness

once it's rolled out I cut a 20 cm in diameter disc

I cut outside the tart circle

I poke with a fork

so it does not develop too much

I set the mat on the grid

I add baking paper over it

and I set a baking tray to avoid over development

I bake for 25 min at 180°C

after 25 min I take out the pastry, I remove the tray

the baking paper

I dust with icing sugar

I bake again for 5 min

after 5 min the sugar has caramelized

I cut again to make a regular pastry disc

I let it cool until assembly

I then bake apples with caramel, for that you'll need

75 g of salted butter

200 g of sugar

6 apples, I choose Pink lady

I simply peeled the apples and cut them with my slicer

I get ful and half slices

that I'll set in my mould once the caramel will be made

for my caramel I drop the sugar in the pot

I heat it at middle power until the sugar becomes amber

once it's amber coloured I add the butter

I add butter

and I whisk to get a beautiful caramel

I then drop it in the mould and set the sliced apples

it is the "universo" mould by "silikomart"

I spread it out

and I set the apples

once it's all filled I bake for 1h at 170°C and I cover it at half time

after 1 h I remove the baking paper

I let it cool completely at room temperature

when it's cold, I put my hand uder to hold it on the palm of my hand

with the knife palette I set it on the pastry

like this

it might run a little

and if some apple remain stuck

we'll place them with the hand

as if nothing had happened

try to center it as much as you can

and I add the missing ones with my hands

tighten it to be able ti pipe the milk jam flavoured whipped cream all around

if it is too juicy, absorb with kitchen towel

it is now ready for piping

to make this milk jam flavoured whipped cream you'll need these last ingredients

250g of whole single cream at 30% min

50 g of milk jam

I just drop the cream and the jam in my mixer

and I whisk it until I get a thick whipped cream

when I get a thick cream I pour it in a piping bag

with a "saint-honoré" piping bag tip

I a can start piping

I first try to pipe aside to be comfortable with the angle

and then let's pipe

Liverpool host Southampton at Anfield for the 43rd time on Saturday, having won 26 of the previous 42 home games between the Reds and Saints.

Saints' defensive record against Reds.

Liverpool have not scored against Southampton in 428 minutes of football in league and cup since Daniel Sturridge put the Reds 2-0 up on the South-Coast in March 2016.

Last season the teams played out 2 goalless draws in the Premier League – the first such time since 2008-09 against Stoke that both Liverpool's meetings against the same club had failed to produce a goal.

The teams met four times in total, including twice in the Semi-Final of the League Cup – the Saints won each cup game 1-0.

Last season was the first since 1999-2000 that both league meetings ended in a draw.

The last 2 league clashes at Anfield between the clubs have ended in stalemate.

There has never been 3 in a row on this ground.

Goals galore before!.

Liverpool's biggest Premier League victory came in January 1999 when they beat Southampton 7-1.

The next goal scored will be the 100th in their Premier League clashes and the 50th in that time at Anfield.

Liverpool have failed to score in only 7 of the 53 meetings with the Saints at Anfield in all competitions.

Only 3 of the 53 Anfield clashes in all competitions have failed to produce a goal – league meetings in February 1992, May 2000 and last season.

Klopp's Saints record.

Jurgen Klopp has not beaten Southampton as Liverpool manager in 4 league meetings – drawing 3 and losing one.

He has defeated the Saints once in 7 clashes – a 6-1 League Cup win at St.

Mary's in December 2015. Mane's previous.

Sadio Mane both scored and was sent off on this ground in October 2015 while playing for Southampton.

His equaliser came in the 86th minute – his red card in stoppage time.

Mane played 75 times for the Saints, scoring 25 times, including 21 goals in 67 league appearances.

For the Reds he has 16 goals in 39 league and cup games.

He scored 4 goals in 4 appearances against the Reds.

Super sub Sturridge.

Daniel Sturridge has scored 11 goals for the Reds as a substitute.

Only David Fairclough (18) and Ryan Babel (12) have come off the bench to score more.

Sturridge has scored more league goals as a sub (8) than any other Liverpool player in history.

Salah's on fire.

Mo Salah has scored 7 league goals in 853 of action since joining from Roma.

He averages 121.85 minutes per goal.

Only Fernando Torres of all Reds players who have scored at least 5 Premier League goals has a better ratio.

Only Sergio Aguero and Harry Kane (8 each) have netted more in the top-flight during this campaign.

Salah has reached 12 goals in a season for the club quicker than any other Reds player since Michael Owen in 2001-02 who also scored his 11th and 12th goals on November 4th.

Jurgen Klopp discusses possibility of moving Joe Gomez to centre-back

Jurgen Klopp has stressed that Joe Gomez is ready to play at centre-back for Liverpool, though he suggested this change wouldn't come immediately.

Gomez has drawn widespread praise for his displays in his natural role for England in their 0-0 friendly draws with Germany and Brazil earlier this month.

This has led to calls for the 20-year-old to take over at centre-back for the Reds, after showing his strength and maturity up against Neymar on Tuesday night.

Whether Gomez will shift his role for Saturday's clash with Southampton is questionable, given Nathaniel Clyne is still sidelined and Trent Alexander-Arnold is being eased in.

But speaking at Melwood on Friday, Klopp insisted there is "no doubt" Gomez could perform at centre-back for Liverpool.

"Joe knows about his still-existing little issues.

He has to improve, but of course he's ready for it," he told reporters.

"He's a fantastic player, [he's] played a lot this season.

We take care of him, he was injured in a time of his life when people are still growing, that's a medical thing.

"We want to have him for the next 15 years.

He's not a one-team player, but we want to have him here for a long time.

"He's ready for it, but he can also play as a full-back.

That's very good for us.".

One of the motives behind using Gomez at centre-back would be to replace one of Klopp's under-fire options at the heart of the defence.

But while Joel Matip, Ragnar Klavan and Dejan Lovren have been far from perfect this season, Klopp continued to stress that the Reds need to improve collectively in defence.

"We have to improve defensively, that's how it is, but not how you discussed it about single players here or there," he added.

"No, as a team we have to protect ourselves better.

"We did that in [the last] three games.

We didn't give them any counter-attacks, or not a lot.

It was very important for a dominant side.

"That's what we have to do again.

 Southampton are fourth in the table for possession; not too many points so far, but probably still feel good.

"It's our job to make them less confident because of our game.

With the strongest squad of the season at Jurgen Klopp's disposal, the boss has some incredibly strong offensive lineups to select from against Southampton.

Liverpool return to Anfield looking to use the momentum built up before the international break to resume seamlessly with a third straight Premier League win.

Southampton's arrival – which will see an Anfield reunion for Mauricio Pellegrino – kicks off a hectic period for the Reds, who face 13 games in just 45 days.

Klopp's side will therefore be desperate for victory to maintain impetus through the gruelling schedule, and begin hitting consistent form in a crucial period.

Klopp has been boosted in his pursuit of that by the returns of several key players, and with the strongest squad of the season and various systems at his disposal, the boss has some exciting lineups available for Saturday's clash.

Liverpool's XI vs. The Saints.

As if the restart of the Premier League isn't exciting enough, Klopp could mark the occasion by fielding one of the strongest lineups of his tenure against the Saints.

Lallana will almost certainly not feature in that, with the boss suggesting the returning midfielder will be used from the bench at some stage with no need to rush him back.

But the wealth and quality of talent available – especially in midfield and attack – gives Klopp several incredibly strong, offensive selections.

A tough job awaits the German in fitting his many match winners into a cohesive lineup, but one way would be return to the usually deployed 4-3-3 system.

In front of an unchanged defence, Henderson could replace Gini Wijnaldum to slot back into his deep-lying role to hold midfield, primarily with support from Emre Can.

Having both of the naturally combative duo would open a free-roaming role for Coutinho to wreak havoc and provide ammunition to a lethal front-line of Mane, Mohamed Salah and Roberto Firmino.

Leaving Oxlade-Chamberlain out would be harsh, but such a lineup would give plenty of flexibility – given it could easily become 4-2-2-2 as used at West Ham – and most importantly, adequate defensive security and serious firepower.

Switching to the all-out-attack 4-2-2-2 system from the off at London Stadium certainly paid dividends.

And for a winnable game at Anfield, Klopp could be tempted to stick with it in attempt to blitz a Southampton side who proved a nut too tough to crack in four games last season.

It would leave Klopp again facing tough calls with who of his attackers misses out, but selection could be influenced by fitness issues and with one eye on the two huge games that follow.

Mane's recurring hamstring issue could see him preserved and Oxlade-Chamberlain retained, placing Coutinho into the Senegalese's left-side slot supporting front two Salah and Firmino.

Meanwhile, slight rotation could come in midfield where Emre Can could make way for Henderson rather than Wijnaldum, keeping the German fresh for the bigger tests against Sevilla and Chelsea.

And the same could arrive in defence, where Alexander-Arnold's more front-footed approach could be utilised in a game that could become attack versus defence – thus saving Gomez for sterner defensive tests in the next two.

It would perhaps be a very bold selection, but the quality and power of attacking play that would arrive combined with the need for a routine three points make it a gamble worth taking.

Keeping the rest of the Lovren-less defence the same, Liverpool would look like this for a rare 3pm start at Anfield:.

The first game after an international break is always tough, but the Reds can use the positive form and new-found confidence to earn another crucial three points at Anfield.
