Ichigo Daifuku♪ ~Strawberry Mochi Dumplings~
Ichigo Daifuku is a kind of Japanese confection consisting of a strawberry inside 'Daifuku', which is a rice cake stuffed with sweet bean jam called An.

Make Tsubu An. (sweet bean jam containing whole beans)
Adzuki beans from Hokkaido.
Rinse 200 g of adzuki beans.
Put adzuki beans into a pot with a lot of water and heat it.
Once it boils, turn down the heat to medium and cook for 15 minutes.
Put a lid on the pot and steam it for 15 minutes.
Drain.
Pour 1000 ml of water and heat it.
Once it boils, turn down the heat to low and cook for 60 minutes.
Soak a bean into cold water and check the hardness.
The beans are finished when they easily crushed out when pressed between your fingers.
Pour some cold water gently and cool it down.
Drain the beans in a strainer.
Return them into the washed pot.
Put 200 g of brown sugar.(or sugar)
Cook on medium heat.
Simmer down until your favorite hardness.
Keep the heat on medium.
This time, I cook for 4 minutes.
Wrap with plastic wrap to prevent from becoming dry.
Wash strawberries and remove hull.
I recommend to use smaller strawberries for Ichigo Daifuku.
Make 40 g of Tsubu An ball.
Wrap it in Tsubu An.
Make Ichigo Daifuku.
120 g of refined rice flour called Shiratamako.
150 ml of water.
Mix well.
Put 20 g of granulated sugar(or sugar)
Microwave it for 2 minutes.(500W)
Mix well again.
Microwave it for 2 minutes(500W) again.
Mix well until it becomes sticky.
Take the dough onto a tray covered with potato starch.
Sprinkle some potato starch over the dough.
Divide it into 8 equal after slightly cooling down.
Wrap the strawberries and Tsubu An.

Wrap it as well.
Make tea.
Pour the tea to the last drop.
It's ready to eat♪
