Simmered Beef Gristle Croquettes♪ ~Gyusuji Croquettes~
This time, I am going to make Gyusuji Croquettes.
Gyusuji means beef gristle.
If you add flour and milk to the beaten egg coating, the croquettes will stay crisp even when they're cold.
These croquettes are well flavored so you don't need to serve with sauce.
It's very tasty, so please try it yourself.
Prepare beef gristle.
Put 250 g of beef gristle into boiling water and cook for 1 minute.
Put it into a pressure cooker.
Pour 1500 ml of water.
Skim off the scum.
Cook for 20 minutes.
After 20 minutes.
Turn off the burner and leave it for 60 minutes (cooking by remaining heat).
After 60 minutes.
Remove floating fat.
Make sauce for beef gristle.
25 ml of sake.
25 ml of mirin.
Burn off alcohol.
400 ml of broth.
40 ml of soy sauce.
1.5 tbsp of sugar.
Cover with a drop lid.(You can use aluminum foil instead of drop lid)
Simmer on low heat for 30 minutes.
As the contents cool they will absorb flavor,
so leave until it's completely cool.
Simmered beef gristle called "Gyusuji Nikomi" is done.
Put some sauce and broth into a pot.
Taste.
Add soy sauce or sugar if desired.
Boil udon noodle.
Put some Gyusuji Nikomi.
Sprinkle some spring onion.
Gyusuji Nikomi Udon noodle is done.
Enjoy Gyusuhi Nikomi Udon noodle!
Delicious.
Resume cooking.
600 g of May Queen (potato variety). ※May Queen are oblong potatoes with pale yellow skin.
Pour water over the potato till it just covered them.
If you like flaky feeling, please use baron potato.
Cook on low heat for 15 minutes.
Turn off the burner and leave it for 15 minutes.
2 tbsp of sake.
2 tbsp of mirin.
Burn off alcohol.
3 tbsp of soy sauce.
1 tbsp of granulated sugar.(or sugar)
Put 1/3 tsp of sweet soybean paste called "Tianmenjiang" as a secret ingredient.
Bring to a boil and turn off the burner.
Peel the potato while it is hot.
Mash it using a folk.
Pour cooled sauce and mix well until smooth.
Divide into twelve.
Make batter.
Beat an egg well.
50 ml of milk.
Put 25 g of flour and mix well.
Cover with panko.
Shape it.
Cover with a thin plastic film and leave it for a while.
This time, I make fried broccoli too.
Cut some cabbage into fine strip.
Mince some parsley.
Cooking.
Heat some oil to 200℃(392F).
Deep fry the croquettes at a high temperature for a short time.
Put croquette into the oil gently.
Leave it in oil without turning over for 30 seconds.
If you touch the croquettes by large chopsticks, it may burst.
Turn it over after 30 seconds.
Deep fry croquettes until they become golden brown.
To fry finely, remove panko fallen into the oil frequently.
Deep fry broccoli too.
Look! Very crispy.
Fried broccoli.
Sprinkle some parsley.
Garnish with some mayonnaise.
It's ready to eat♪

3 SECRETS to CLEAN UP your guitar playing - Learning Gypsy Jazz - Duration: 8:02.

I think you've already seen videos of mine on Youtube
and several people asked me how I was doing to have a clean guitar playing
because a lot of guitarists and when they play all the notes aren't all very clear
it's a bit rough
and it's true that the way I play is relatively clean, we can hear all the notes
sometimes I get reproaches because I play too cleanly and it's too smooth
but it's something I like, I like to play very cleanly
So, in this video, I'll give you 3 small tips
which will help you have a cleaner guitar playing
a less rough guitar playing so all the notes come out clearly
making the guitar's sounds cleaner
so, the first advice to improve all of that
will be to work very slowly
for example if you learn the scale, instead of playing it
as fast as possible, very poorly but thinking "awesome I can play it fast"
instead of that play it very slowly
being careful to play properly each notes
and above all not build on small flaws
because sometimes you'll work on a lick and there will be a small part, two or three notes
which are difficult right or left hand wise
and you play it over and over again, and in the end there will always bit that small difficulty
and if you don't solve it you will build on flaws
and if you're learning a scale and at some spot it doesn't work
and you keep playing and speeding up
at the end there will always be this unclean spot
because you kept your flaws by repeating it all the time
So, think about worky slowly at first when learning something
may it be for a theme, an improvisation, a scale or an arpeggio
always work slowly, and only speed up when you can play properly
the lick, the scale or arpeggio
once it's proper and clean
If...
if you can't play something fast, in that case slow down
and focus on having a clean lick
So, that was the first tip to have a clean guitar playing
work very slowly and be careful to all the difficult parts
and don't build on that as soon as something is too difficult
you slow down and work slowly
to solve that and then gradually speed up again
and you'll have managed the difficult part
the second thing to have a clean guitar playing
will be to repeat, repeat and repeat again all you do
because if you work on an arpeggio for example
and play it a bit and move on
then when you will play it, you won't know it as well
than if you'd have repeated it for a while
for example if you work on the C scale
if you work that in loop for 10 minutes per day for several weeks or months
and at some point it'll become obvious and it will just come out
you won't even think about it anymore and you will be able to play it perfectly
you will know it well and thus your guitar playing will be clean
when playing this scale
if you work on it from time to time
you won't know it as well
and it is more likely that your sound won't be as clean when playing it
because you won't be as accustomed to play it
So, when working on something, a good way to do it is repeat and repeat
as when you were little and learning the multiplication table
we would repeat 1x2=2, 2x2=4
something like that, and we would repeat and every week we would have multiplication table tests
for weeks and months and it eventually became second nature
you knew them by heart and learning on the guitar is about the same
if you repeat each day, each week, each month
at some point you won't have to think about it, it is then an automatism
and it will allow to have a clean sound
because you know things well
through your muscle memory
so that was the second tip to have a clean guitar playing
repeat multiple times everything you play to know it well
and the third advice to have a clean guitar playing
will be to be careful about sounds and the right hand technique
because if you play something but you don't focus on the sound and your right hand
like that
even if your left hand is good
if your right hand is a a bit random
you won't have a nice sound, a nice right hand fluidity
and it will influence a lot whether or not your guitar playing is clean
so think about working each notes left or right hand wise
I made an article about the right hand, I don't recall the exact name

I think it was "3 tips to have a better sound on the guitar"
in which I explained how to hit strings, how to place your right hand, wrist, etc
it's things that is important to work on, to have a clean sound
when you work on something think about all these tips
in order to play each notes properly
be careful about your right and left hand, the pick, how you hit strings
it will allow you have a clean guitar playing
if you do that and repeat, repeat and repeat several times
and on top of that work slowly
in the end you'll manage to have a relatively clean guitar playing
with precise and clear notes, and nothing spilling over
So it was my three small tips in order to have a cleaner guitar playing
Work slowly without building up on flaws
so as soon as there is a flaw, work on it slowly on it to solve it and not reproduce it
the second tip was to repeat things several times, each day for multiple weeks or months
to really know everything you play
and the third advice is to be careful about the sound and the right hand technique
when playing licks, arpeggios, scales and that type of things
So, think about these three tips
if you apply them, you'll see that gradually you play more fluidly, prettier
you'll have a better sound and a cleaner guitar playing
