This time, I am going to make Chicken Tatsuta & Chicken Taruta.
It is Japanese McDonald's limited-time menus.
Tatsuta and Taruta is same burger except Taruta has tartar sauce.
It's very delicious, so please try it yourself.

Make cucumber pickles.
Cut off both ends of small cucumbers.
100 ml of vinegar.
100 ml of white wine.
1 tsp of sugar.
Some black pepper.
1/2 tsp of salt.
Bay leaf.
Red chilli pepper.
Cook on low heat for 2 minutes.
Put them into a Ziploc bag after cooling down.
Place in a fridge for 3 days or more.
Make buns.(for 4 buns)
50 g of carrot.
230 g of strong flour and 70 g of weak flour.
Beaten egg.
2 tbsp of skim milk.
15 g of sugar.
8 g of salt.
Squeeze juice from carrot.
40 g of room temperature butter.
100 ml of tepid water.(about 35℃(95F))
1.5 tsp of dry yeast.
Leave it until the first rising.
Make easy round gateaux mould.
Cut cooking sheet in rectangles(about 3×35cm)
The dough turned yellow by beta‐carotene of carrot.
Cover the dough with a moist kitchen towel and rest for 15 minutes.
Roll and stretch the dough for about 30 cm length.
Counterclockwise type is very rare, so I made it.

Let sit for the second rising at 40℃(104F) for about 40 minutes.
Second rising has finished.
Preheat the oven to 200℃ (392F).
Spread the beaten egg and put the round gateaux mould.
Bake the buns for about 10 minutes.
Put them into a plastic bag after cooling down.
Make mayonnaise.
Remove the chalaza.
A pinch of salt.
2 tsp of white wine vinegar.(or vinegar)
1 tsp of Japanese mustard powder.
First, mix well because salt is not soluble in oil.
I had forgotten to sprinkle some pepper.
Use 120 ml of oil.
First, put 1 tbsp of oil.
Mix well to emulsify.
First mixing is especially important, so mix thoroughly.
Add 2 tbsp of oil.
Mix well.
Add 2 tbsp of oil.
Repeat it and use all of oil.
Special mayonnaise it done.
Make chicken patty.(for 4 servings)
Remove the skin from chicken breast.
Remove the skin from chicken thigh too..
Remove the extra fat.
Remove the sinew.
Grate 10 g of ginger with skin.
2 tbsp of soy sauce.
1 tbsp of Shaoxing rice wine.(or sake)
Mince 10 g of ginger.
Cut some cabbage into fine strips.
Put half of them in a food processor and make into a paste.
Cut another chicken into 3~5mm cube.
Minced ginger.
Sprinkle some potato starch onto a cooking sheet.
Coat your hands with oil and shape.
Sprinkle some potato starch over the patty too.
Shake off the excess.
Wrap it in plastic wrap and store in the fridge.
Make tartar sauce.
Boil about 100 ml water and put an egg.
Put a lid and cook on low heat for 6 minutes.
Turn off the burner and leave it for 10 minutes.
Cucumber pickled for a week.
Mince a pickles(20 g) roughly.
Mince 30 g of new onion roughly too.
Put 3 tbsp of special mayonnaise.
1 tsp of grain mustard.
Some squeeze of lemon.
Mix well and tartar sauce is done.
Cooking .
Deep-fry the patty at 180℃(356F).
Leave it for 2 minutes.
Turn over after 2 minutes.
Take out the patty after 2 minutes.
Leave it for a while.
Cut the buns and make French Fry.
Oh, French fry is done.
Sprinkle some salt.
Heat the oil to 200℃ and fry the patty again (for about 10 seconds).
Put the buns on a steaming basket cut end down.
Steam it for 20 seconds.
A lot of special mayonnaise.
Put some tartar sauce.
Chicken Taruta.↑ ↑ Chicken Tatsuta.
