Rouskuva ohratto - Crunchy barley risotto | #vegaanihaaste #veganuary - Duration: 5:14.

Hello everyone! It's dinner time and today I want to share with you my green and crunchy barley risotto recipe.

This is again very simple to do, very delicious and also healthy.

But if you want more decadent version, it is also very easy to do.

Let's see what you need for this...

Here are all the ingredients. 1 dl whole grain barley. You can also use other grains of your liking.

Then you need about 150g of broccoli, 3 stalks of celery, bunch of kale.

In the end I'll ad there also fresh parsley, white balsamico vinegar and nutritional yeast.

Then I have dried herbs mix: pepper, onion, chives and parsley. Also black pepper.

About I dl of chopped walnuts and of course you need water.

If you want more decadent version then substitute the water with plant milk or cream, or white wine if that's your thing.

Instead of nutritional yeast you can use grated vegan parmesan.

But I prefer whole foods.

First cook the barley. I have half a litre of water.

1 dl barley.

Then 1 tbsp herb mix and 0.5 tsp black pepper.

Barley has been cooking now for 20 minutes so it's almoust done, perfect time to add the veggies.

Also the walnuts.

Now I let this cook until the barley is completely done. Just don't let the veggies get too soft, they should be a bit crunchy.

Veggies have been boiling now for about 10 minutes and they don't need any more.

Now I add here 1 tbsp of white balsamico and 0.5 dl of nutritional yeast, always forget what it is in Finnish...

Then just mix and let stew under the lid for few minutes before serving.

Food is ready and at least the aroma and colour are perfect.

Really beautiful.

Let's see what this tastes like.

This makes one big plateful. In my opinion this recipe is only for one person

Maybe this might feed two not so hungry people, or who don't exercise like I do.

For me this is one person portion, so double the recipe according to how many eaters. Let's taste.

Hot.

Nice and crunchy. I like that you have something to chew.

This is perfect.

Amazingly good, fits perfectly with cold winter weather. Really fantastic.

In my opinion this doesn't need any plant cream or cheese, but of course always cook according to your own taste buds.

And if you're used to salt then sprinkle some on top, but for me nutritional yeast gives a similar edge as salt.

This is perfect, amazingly good.

I think I'll go to couch to enjoy this...

if you dont know what washi tapes are basically u use

use them to decorate your journal or

your planner at least that's what I'm

going to use these for and they are

decorative tapes that you glue down

at least im pretty sure u glue them down

unless these are preglued

we'll find out

oh my gosh thank you these are beautiful

literally the most beautiful thing ever

this is so pretty this is gorgeous and

I'm like obsessed and omg it

matches my shirt

its fate okay guys it matches my

shirt and also anni sent me this journal my

current one is black and pretty

boring but this it's so beautiful wow

so it's got like this little panel on

the side it's spiral it's so cute and

it's like pink is actual pink spiral

that's ridiculous

oh my gosh guys this is what the inside

looks like that's ridiculous
