Appurato che per ottenere i benefici di salute il cioccolato deve avere un contenuto di cacao di almeno il 70%, la dietista Chiara Campanini dell'Azienda Ospedaliera Universitaria Senese ha elaborato per i lettori della Stampa due ricette a base di cioccolato fondente dal contenuto calorico ridotto
Torta al cioccolato fondente dose per 8 persone Ingredienti: Acqua 330 g, Farina 00 225 g, zucchero 100g, cioccolato fondente 80g, olio extravergine di oliva 50 g, una bustina di lievito per dolci
Preparazione Tritare il cioccolato finemente. Prendere un tegame dai bordi alti e versare l'acqua fare scaldare a fuoco lento
Aggiungere lo zucchero e farlo sciogliere bene aiutandovi con una frusta a mano. Aggiungere il cioccolato a scaglie continuando a mescolare
Versare il composto nella tazza del frullatore e frullare tutti gli ingredienti. Lasciare raffreddare, dopodiché prendere una ciotola setacciare la farina versare il composto nella ciotola e mescolare bene
versare l'olio e la scorza di arancia continuando a mescolare. Infornate a 180°C per 50 minuti
Budino lamponi e cioccolato fondente dose per 4 persone 500 g di lamponi, 70 g zucchero, 125 g di yogurt magro, 80 g cioccolato fondente, 100g di succo d'arancia, 4 g di agar agar, foglie di menta q
b. Preparazione Mettere a macerare i lamponi con lo zucchero ed il succo di arancia per 15 minuti
Frullare il tutto e versare il composto in una casseruola con lo yogurt e portare a ebollizione
spegnere e aggiungere agar agar mescolando bene. Riaccendere la fiamma e lasciare cuocere per 2 minuti
Versare il preparato nelle coppette e lasciare raffreddare. Sciogliere il cioccolato fondente a bagnomaria e colarlo lentamente sopra le coppette
Mettere in frigo per alcune ore. Decorare con foglioline di menta.
