I get back to you in my kitchen to propose a quite simple passion fruit chocolate tart
it is made of a shortcrust pastry
with a passion fruit jam layer
and a chocolate mousse with some decoration
chocolate shaving and passion fruit pearls
I pull on my apron and I show you how to make it
I start by making the chocolate mousse because it has to sit for 3h into the fridge
you'll need these ingredients
110 + 260 g of 30% heavy cream
150 g of 40% milk chocolate
I first melt the chocolate with microwave
when the chocolate is melted I leave it aside
and I drop the small amount of cream in the sauce pan
and I bring it to the boil
I pour the cream in 3 times over the chocolate and I whisk between each additions
I pour a first third and I whisk
when the cream is well combined to the chocolate I add the big amount of cold cream
once it combined I cover with plastic wrap and I store at least 3h into the fridge
3h into the fridge
while the cream is cooling down I make the shortcrust pastry with these ingredients
3 egg yolks
130 g of sugar
150 g of soft unsalted butter
200 g of flour
a pinch of salt
11g of baking powder
I first whisk the egg with sugar
I pour eggs and sugar
and I whisk until it gets whiter
once the are whisked
I remove the whisk and I add the butter with the K-beater
I unstick a bit
once it's approximately combined I add the flour
baking powder
and salt
I give it a beat again
when I get a pastry I wrap it with plastic wrap
and I pop it into the fridge for 1h

after this resting time I roll my pastry into 5 mm thickness
and then I'll cut it with the 20cm square
I dust with flour the mat
also flour on the pastry
and I roll it out
when I get the right thickness I cut the pastry
and I remove the excess
I bake the pastry for 15 to 20 min at 180°C
I poke with a fork
after 15 min the pastry is baked so I let it cool down until assembly
while the pastry is cooling down I make the passion fruit jam layer with these ingredients
300 g fo passion fruit puree
30 g of sugar
3 g of agar-agar
I mix together sugar with agar agar
simply with a spoon
then I drop the passion fruit puree in a sauce pan
and I add the mix little by little to avoid lumps
once it's combined I bring it to the boil and I let it boil for 1 min
once it has boiled 1 min I let it cool down a little bit for 10 min
in order to pour it into the square
after 10 min the puree it thicker
if it's not thick enough, put the pan into cold water to make it cool down faster
then I drop it in the square
I move to make it flat
I pop it into the fridge for 1h So it get hard
when the jam is hard and just before starting the assembly I whisk the chocolate cream to get a mousse
I remove the plastic wrap
I whisk the cream until I get a chocolate mousse
when I get a beautiful I drop it into a piping bag with a "Saint-honoré" tip
and I store it into the fridge until assembly

all ingredients are now done I can start the assembly of my passion fruit chocolate tart
as a decoration I put some chocolate shavings and passion fruit pearls

I first cut the jam ! I remove 1cm on each edges
in order to fit on the pasrty
I then set the pastry upside down
try to center it as much as possible
I cover with serving plate
and I put it upside down again
I can then ustick the mat
I can now pipe the chocolate mousse
when I'm done with piping I scatter with chocolate shavings
all around
I also put some passion fruit pearls

you can replace the passion fruit jam by a strawberry jam
I think it will taste as good as this one
