Today we will make Tamarind chutny
Wash 250 gms of Tamarind and soak it for 7-8 hours
400 gms of jaggery cut into small pieces
you can use sugar too instead of jaggery
or half sugar and half jaggery can also be used
Garam masala powder
Rock salt
Roasted cumin powder
Red chilli powder
deseeded Dry dates or chuaara cut into small pieces
We
can also use raisins
Dry ginger powder
First we will separate the pulp of tamrind
with the help of a seive we will seprate the pulp of tamarind
The pulp has come out
Put it on the medium flame
add the jaggery in it
We will keep it stirring untill the boil comes and the jaggery melt down
Add 1/2 tea spoon of rock salt
1/2 tea spoon plain salt
1/2 tea spoon red chilli powder
1/2 tea spoon garam masala powder
1/2 tea spoon roasted cumin seeds powder
chopped dry dates ( chuaarey)
1/2 tea spoon dry ginger powder
Mix well
Tamarind chutny is ready now
it took around 10-12 minutes to prepare the chutny
Turn off the flame now
The chutney gets more thicker after it cools down
We can store this chutney for 5-6 months in an airtight container and keep the container in the fridge
When ever we have to use the chutney , take it out in required quantity ,add some drinking water to it to balance the consistancy
