- [Anthony Lombardo] I grew up eating
Italian-American red sauce and big bowls of penne Bolognese,
garlic bread, chicken Parmigiano.
These are staple dishes, nothing wrong
with any of these dishes.
But it's not a good representation
of what I saw and learned in my travels in Italy.
Italian food is a little bit more refined,
when it comes to the pasta dishes.
It's not just garlicky tomato sauce.
We wanted to be a restaurant in metro Detroit
that Detroiters aren't necessarily used to,
as far as Italian food goes.
We wanted to really push the boundaries
of being contemporary and Italian at the same time.
Modern Rome is diverse cuisine to me.
But, that's just kind of the inspiration to SheWolf.
A lot of chefs from Rome have traveled,
been all over Europe, spent time in Japan,
and they're bringing a lot of their knowledge
back to Rome with them and cooking with it.
So, Roman cuisine is expanding, as far as
the amount of ingredients and techniques that you're seeing.
But there's staple dishes that just won't change.
A lot of the dishes on our menu
are just straight up chef-driven dishes
using Italian ingredients,
and stuff that I've seen in my travels.
But you do have the four staple Roman pastas on the menu.
Cacio e pepe became very trendy
based on its simplicity and simple flavors.
Cacio e pepe becomes almost like saying "pumpkin spice."
It's really hard to over-chef cacio e pepe.
It's simple in its purest form.
Freshly cracked black pepper in a pan with some olive oil,
and let it get nice and toasty.
Once your pepper starts to really get toasted,
you're going to hit it with a dash of pasta water,
a touch of butter, and make your pan sauce.
Then the pasta comes out of the water,
goes into the peppery butter sauce.
You give it a toss, you add your pecorino cheese,
and you keep coating it, and that's it.
It's pretty simple: butter, cheese, pepper.
Last summer I was in Rome, I ate carbonara maybe 50 times.
You know, "research."
Once you add guanciale to cacio e pepe,
you basically have a pasta called la gricia.
If you add a little bit of egg, you have a pasta carbonara.
They all have very similar ingredients,
and they're all very Roman.
The first time I had pasta carbonara,
I was a young cook, about 18, working at a restaurant.
And the chef that I was working
had some leftover breakfast sausage and some peas,
so he made a very false representation of carbonara.
But that's when I realized it's delicious.
We make a zabaglione, which is a way
of incorporating the eggs into it
and keeping it light and fluffy.
So, we take our guanciale,
we cook it down to get all the fat out of it,
crisp up that guanciale.
We take that guanciale fat and we put it in a bowl
with pecorino cheese, white wine, and eggs yolks.
And we whip over a double boiler.
A savory guanciale fat, egg, cheesy zabaglione.
And once that's nice and fluffy,
we'll charge it, add it to an ISI container,
and add even more air to it.
And then, boil your pasta,
add it to the crispy guanciale,
give it a nice coat.
Pasta water and guanciale fat are coating your noodles.
Then you add your zabaglione, fold it in nice.
And that's the basic rundown of our carbonara.
We wanted to do a baked pasta al forno.
Stuffed shells are kind of a big Italian-American tradition.
Stuffed shells, almost like lasagna,
baked in a casserole dish,
scoop it out.
I have fond memories of eating that growing up
in an Italian-American community here in metro Detroit.
And we wanted to do like a seafood version.
We take the octopus Bolognese
and we mix it with our bechamel,
add a little bit of fat to it.
And we pipe it inside the stuffed shells.
Then we brush a little bechamel on top and bake it.
Once it gets those nice, crispy outside edges,
kinda like lasagna,
everybody knows that best part of baked pasta
is the crispy, burnt edges.
We hit it on the plate and we garnish it with our blush sauce
and we top it with a little pine nut gremolata,
which adds some texture, and some bread crumbs,
a little bit of lemon for a little bit of freshness
to the dish.
This is not something you're gonna see in Italy per se.
Alla Bolognese means "from Bologna,"
which is a land-locked city.
Our Bolognese is made with octopus,
hence, you would never seen it in Bologna.
It's one of those dishes where Italians come in,
eat it, and then yell at me
because Italians, you know how Italians are.
I've worked in restaurants where we've done
contemporary American food,
but Italian food is my heart and my soul and I love it.
I'm not a very well-rounded chef, I will say that.
I am not a well-rounded ingredient chef.
I'm very Italian in that aspect.
I'm not closed-minded.
I love all cuisines, but when it comes to cooking it,
when I'm forced to be creative,
I very much lean on the Italian experience that I've gained.
I hope I'm always cooking Italian food.
It's my favorite thing to do
and there's a lot of different types out there.
It's not just pastas.
I hope to always be creative.
You can open 20 Italian restaurants
in Detroit based on every region
and 1,500 different menu items that are not alike.

BBMAs performance and sold out Love Yourself tour! From there, male groups appear to
dominate, with 19 of the top 30 acts. Girl groups had a strong showing, though, with the
likes of Red Velvet, BLACKPINK, and TWICE making the list, among others.
Taking a closer look at the top 10, BTS leads the way as I mentioned before.
EXO comes in at No. 2, Stray Kids earns the highest debut ranking in Tumblr Year in
Review history at No. 3, Seventeen lands at 4, GOT 7 is down two spots to No. 5.
Monsta X find themselves at No. 6. SHINee finishes in 7th place. Red Velvet jumps two

MEXICANOS REACCIONAN A BTS (COREA DEL SUR) - Duration: 24:18.
How are you friends? this is mexican curious watching, how about adan
how are you doing? good people, here again regards, excellent we hope that you
find the best gentlemen and not forget to subscribe to our channel,
like, share if you like our opinion and good adan, in this
occasion we are going to honor the name of the channel of curious Mexicans
watching, because we're going to Korea from the south sir, to see a band of
k-pop called "BTS" and that is sounding a lot in the whole world, not what
we can deny, yes, it's a band that Now he's hitting with a pipe, as you say
Adan and well, it is said that They started from small, did not they? something like that,
Well, if it's a project that really ... good of the little information that
I found started with the big hit entertainment label of
korea and they were integrating them
from several places, until there came a point where already
joined seven members and already they launched like a ... like a band, like
they call them, boy band? and good keep in mind that we do not investigate
very thoroughly, because we really want that stands out more the reaction, as soon as
to music, lyrics, video and good, right now there is one, we saw that he already has
more than 500 million views, that if it is extraordinary, who does not
I would like to have that? they are a really a global phenomenon among all people,
because I do not think it's anything else your audience, the audience that listens to you
I think they are only young, if they should be of all ages, in such a way that
caught our attention, he called us attention because it really is music and
we want to hear everything and we will see adan, the song that is called DNA in
Spanish, DNA that is how it pronounce in English, let's check out "BTS"
it's a group of seven guys and we're going to have a revised one, which is
Korean pop, k-pop, let's listen to them gentlemen and
We talked about what "BTS" is see if it's true? let's go adan
there's the brand, big hit entertainment
It's like hypnotizing you, right?
that whistle sounds like another song that I've heard I do not remember, but let's
watch
Are you singing in Korean?
well I think they mix languages
it seems to me that the part where it sounds more pop, I think so in Korean and the
part where it sounds like hip hop is more in no English? so is
Pretty colorful video, very cheerful
usually these groups always they dance and they sing, it has to be a job
very tired
and good at the end is the freedom that have because they are dedicated to more that
they do not play any instrument, I think not
at least in the video, as he is told when they do their dance? his performance his ... well it's the show
there is in Korean, it's okay to mix, mix the
English and Korean
100% pop, but it has some touches like electronic, right?
look there are in the universe, there is production, there is production
production is no longer ... it is no longer a million dollars, is a product
that sell millions of dollars, if you see
honestly I could not dance like they respect that very much
the beat of the song makes you move the head, it's very sticky
there are gentlemen
it's over, I thought I was going to follow the music, that was "BTS" with DNA, as you see adan? to "BTS"
how.........
I do not know how I really feel, you're confused? I'm confused exactly
in what relieves Adan, to me I seemed
as a pop group, pretty good worked, excellent in its kind
As we mentioned, the production already It's super professional, it's only seen in
the video and good as everything, that entails a responsibility, they must
learn to sing well, learn to dance,
carry a lifestyle to a certain point healthy, because I tell you to dance and
singing does not do it anybody, the truth it's a job
pretty hard and good they have the freedom, I do not know if they play an instrument, it's
the first video I see of them, but what what do they do to my way of seeing they do
very well, it's k-pop as you say or pop Korean and well, here we have seen
metal, jazz, blues, electronic music
romantic, romantic, ranchero, bolero, no we could pass up an opportunity
to see a pop song, that I really now mentioned to you that, it is
a band that is very strong and the 500 million views of adan, the truth
not everyone has 500 million views and this already at the height of the great
US pop performers, although They also have wonderful views, it's
Of course it is a global phenomenon, that's very clear, everything is very
careful, we can not deny it, it's all very careful, perfectly cared for
the shots of the video are ... it's a millionaire production is not
can deny, the video is very colorful, the song is very sticky, yes yes,
I never, never had
listened to, nothing the song if it is very sticky, I remember at times
this group, maroon five, maroon five, ahhh the song? you hear, it has some dyes and it's
what reminded me also has there some dyes that to me
honestly, maroon five I do not like, I do not like how the man sings, with
all respect, I liked it more as they sang these Korean guys, I feel that what
they do well, they dance well, they offer their show, is directed towards a certain
public, but we were talking about what really anyone can hear it,
indeed, yes, it's not my favorite genres the truth
and neither this about the boy bands, I tell you to me, I see them and they remind me of
backstreet boys and the older ones I think they are the USA that were called the
new kids on the block, that I do not know if there were other bands before
but I was a little boy and when they they sounded, the new kids on the block and also
They were, what are they called? take that which is where came out robbie williams
look, look, then I say, it's not my favorite genres, sometimes if I listen
pop, I do not do the ugly, I say no
I'm going to do the ugly but, you have to recognize that it is a very good production
everything is very well done, the parts where it has to be pop sounds
pretty good, the parts where you have to go, because I think it's two guys that go
rapping, if it sounds good, is what you see, we tell them they are seven characters,
within the information that I found if they are two, excellent and I think they are
those who sing in English, I think yes and the others are more ... more
melodic, more mellow and that's father and the formula works,
it works quite well, they complement each other Very good both, that's the way it is and when you see them,
when you watch the video and listen to the music listen ...
you listen to everything together, you understand why he likes the
people, I leave it in clear because the fact that I do not like it
to me, does not mean it's bad, I'm not saying it's bad, I'm
saying that although I do not like it and it's not very to my liking, the truth is
something that is well done, not because of the fact that
I like it, I'm going to defer a job that it's well done, it's just a
global phenomenon, like it or not, is a band that, as you say, has a
production behind that is exorbitant and apparently they also have time,
they do not have a month or a half year, I think they already carry? you read that they carry more than
five years? I have it here, if
really is that as I was saying, if it's a project is a project that is
worked, that's right, it's good thought, it's well thought out why not
They grabbed the first one they met, no no, you have to choose exactly the
characters are 7 members and they were working one by one, no,
As I repeat, it was not ... look at the handsome, bring it, no no no not at all
it was not like that, in fact what it was reading, is that they themselves make up their
letters, some of his lyrics, excellent, maybe
do not... I repeat are more directed towards
youth, that's your market, well that's what we apparently
we see through the video, the lyrics, the music, not we have heard other songs too
that they speak, this lyrics speaks as of love, of feelings, it is very sweet very
very noble and that's also why it's aimed towards a more public is ... clean as well
to say it, it is obvious that a letter like this Well, no ... it would not go to someone who is
accustomed to listening to rock that is accustomed to listening to metal, this is
or who knows? yes who knows? but I say, logic makes us
think that, if logic is the first thing that makes us understand, but good
let's say it's a plus for them, that they compose, because I think
that also make up certain parts of his music, that seems very good to me, because
really, most not all, most of singers or pop performers,
they write everything to them, nothing else They give the voice, the image, same as
worked very careful, but in the end they just take the microphone, many
I repeat, not all, and they sing, logical that behind them there is a voice studio, of
movements, body, care personal, very careful to the letter
gentlemen, because we repeat them is a product sold
super super good, then that about these young people, it seems very good to me, that they
make your letters, very independent that be good or bad, not everyone writes
not everyone makes letters, you know it, not everyone fixes them,
anyone puts them in a song and our friends who see us and know about
music, they have to keep it in mind, to write a letter, put it in
melody, harmony, it's not something I do anyone with talent, is
that sometimes he ... there is like a prejudice there, it
think that anyone can write a song or anyone can make a
song and the truth is that it does not work well, it's a very difficult to achieve
First make your song, your harmony, all the composition and then put the
letter or vice versa, first do the lyrics and then put the music, it's
complicated and not, the truth is that no anyone does it and less than ... well be
a world hit, no less a hit worldwide and good for that too
works hard, so that a song achieves its mission and that it reaches millions and
millions of people, be of the age gender, whatever it is, you have to
also make a slight investment, that is very clear and more in the world of pop
but hey, this is father and apart because, well, we also read that it is a
like the first bands that is like that is very recognized worldwide and
apart from others, I remember that the one started to open this path was the gangnam
style or what was it called? I dont know, We all knew him for this song, for the
song of gangnam style, which is also from there from South Korea and that was a ...
it was a super hit, although one did not want to accept then ... many people
and to date is one of the songs that youtube has more than
billions of reproductions, then
Well, it seems good to me, they have worked for their dreams, they have fought and well there it is
reflected, in his video, as Adam says, very independent because they are your
tastes, that work is recognized, have achieved and I believe well above
many who sing pop, here in america from the north and then it's fine
notice that this is one of the advantages that they have, that
it is no longer to hear the same language, exactly, most of the
bands or big pop productions are Americans, always, and they are
Koreans the language is different, too it's for one who does not know it ...
be exotic and maybe that's whatever it is that catches your attention, and
it's okay that they are not always, the American artists and it's okay there are
give space to to other countries, to other languages and to know
part of what they, they have to offer also for the world,
that's fine what adan says and I agree with him and they also know what
what they do and how they are taking them good way, because it sounds like
parties sing in English or rap and in others sing in Korean, then
it is logical that they want to get there to the market on this side, they are
achieving because, here in Mexico I also think there are many, many and
many fans of "BTS" and then I think it's very good I'm telling you, it's going to be heard
a little funny but, I prefer that the youth somehow listen
this type of pop, to listen to reggaeton and the truth, because I see the lyrics and it's a
little more this .... I mention them soft, more noble, of love, that there is infinity, in
rock, in the metal, everything is mentioned in the love, the way one wants it
write, but unfortunately the reggaeton always
has had the bad reputation of ... being very demeaning against women, of
always talk about sex, maybe not have nothing wrong but the way
that they do it, because sometimes it's a bit, How could you say Adan? offensive? well
it can be offensive or you're thinking that maybe your daughter can devote
That letter and what would you say? So what happened? like the letter that says
the song, but hey, the music I say you listen to what is pop
100% pop, but it has many elements of electronics and things of
that guy, that's fine, there's no problem, I do not even know it's very
danceable, there are doing their performance
guys from korea and I tell them I could not dance and sing, we are made to
different things, but how nice that they raffle, I do not know what their
history of more back and good you said to me also what are these ... we were talking
that there are seven boys and that some like they are called in English, others in Korean
That's right, I do not know if it's the pronunciation
but good one is called Jin, another one is named Suga, another J-hope, that's like in
English, another is called RM by the initials RM, but good like that
they would pronounce themselves, Ji-min or Jimin
V that is like the v of cow, that here we know as the v of cow and Jungkook,
look like those in Korean, I do not know if it's in English but hey, it's pretty
funny too, how they mix their names and I do not know if they are really called
and they're from South Korea, imagine if they were from North Korea
would be vetoed, or would dancing kim jong-un,
because his music is very happy, I do not think that he would do the ugly, well we do not know, well
how is that kim jong-un that says that you will remove all your ...
its nuclear bombs and in the end it's not true, that according to there you have them, you see those gossip that are made
but hey, what a father this band of some way is telling you that
in Korea they also do it very well, if we come to see from South Korea or even from
North Korea, which I believe and do not have the internet like us, free
is what is said, you see that they invent everything to Kim Jong-un until
they eat children and pumps themselves every time, not we know if it's true, but if they reach us
to see from South Korea, North Korea we send you a big hug, we respect you
a lot, how good they have their bands and there are many, not just
them, I believe behind these bands or before, many more will have to come
that is one of the advantages of that they have triumphed,
that's right, behind them they come other groups, not just pop, too
It can be rock, it can also be metal and countless genres, in the end
because music is worldwide and all genres too, they are played throughout the
world, then that's the beauty of know new things
and I told them in a previous video, If I do not like this, it can take me
to know other things, that can like
That's right, that's good and I'm good reading an information that you have, that
in genres mix k-pop and r & b what is rhythym and blues, hip hop and dance,
that's the other touch who listened as dance, that in the
nineties was very ... very famous the dance, who was not going to listen
a dance in the tianguis, the famous disco who wanted to listen to mega dance, what
they were going to run, then here in the 90s here in mexico in any tianguis or
rolling market as you know it in your country, there was always the dance, always with
the hype, boom! Boom! Boom! then he has his dance touches,
that I had left, has as a rhythm that makes me remember things like that,
as when I was a child, is the dance so you can see, hip hop then yes
there the kids, we said it was rap but no, it's hip hop, apparently it's hip hop,
rhythm and blues, because the mellow voices they hear so very ..
as you say melodic, I believe in that point can enter and the k-pop, then there
is, it's like what more it shows, so it's 100% and good there
was "BTS", that's our opinion, there write what you think, they
they like this band, they do not like it, It seems? they prefer to listen to k-pop or
reggaeton, is also valid, there is no problem, I prefer k-pop the
truth if they put me to choose, you Would you prefer adan? yes definitely k-pop,
Reggaeton makes me very bad taste, the truth is not,
no no no, you already named me and you even put me in bad, then better let's go, if you're not going to start talking bad about "BTS" I liked it, listen to them
see their lyrics, their videos, see what they It seems
Every opinion is important, every opinion is valid, there is no problem what
you know well write there, you they knew? What do you think of them? they are
Do they make good? bad? and good let's go adan If this does not take longer,
this was "BTS" with "DNA", there we leave them
thank you, take care, do not forget subscribe, like, share
our video if you liked it, very good adan, take care, let's go and until the next
Sirs
