Today I'll be making Korean style sticky rice as it's the holiday season
Prepare the basic seasoning needed
Along with cinnamon, ginger, and black pepper
get some dates and remove their seeds.
Since it won't be a lot of amount, in a small saucepan,
pour half a cup of water
and a spoon of soy sauce for the flavor and color.
Add a spoon of stevia as well to get the sweet taste.
Since we are going with a small amount of sauce,
start with medium low heat for the flavor to enhance
and boil until it evaporates to half amount.
During that time, we'll be prepping the filling ingredients
Likewise what we did earlier, get rid of the seeds of the dates
and roll them into a circular shape
It would be a perfect deco piece to put on at the end
Prepare some pieces of nuts to add for the crunchy texture.
Basil seed or hemp seed that helps with on your diet would be a good choice.
Personally, I think chestnuts are an essential in Korean sticky rice.
I got a pack of cooked chestnuts in a cvs and diced it
into a size similar to a pine nut
Although you are suppose to use a "sticky rice" for a "Korean sticky rice"
I'm using a oat/konjac rice to make it simpler and lower in calories
First, heat the rice in the microwave for 1 min 40 sec
While the rice has low calories and less heavier,
it doesn't have that sticky and chewy texture
so I just sprinkled a tiny bit of sticky rice flour to the rice.
Now season it with the sauce we made earlier
and add the filling ingredients we prepared.
Mix all this well with sesame oil
Make sure to do this when the rice is hot.
That way everything will season well together.
If it doesn't mix well, add more sticky rice flour
and taste it to see if you should add more sauce or not
Then reheat the rice in the microwave multiple times for 30 sec
The flour will make the rice even more chewier as it cooks
For me I did it two times and the result was a 10 out of 10
On a saran wrap pour the rice and shape it
It's not as thick or firm as a normal one is
but it's firm enough and that it will stay shaped in the fridge
so don't worry too much
Now as we planned earlier we are going to decorate it with dates
Not only does it make the dish look good but it also adds flavor
The sweet tastes makes the savoriness even better
Wrap it up once more to firmly shape it
and once it cools down, it's done!
The chewy but still has a popping texture from the oats
I prefer this version more than the original one cause it's unique
The combination of sugar, cinnamon, date, and ginger is amazing
and it still has that original flavor so it's just a comfort food that tastes even better.
Of course as it is a meal substitute, if having as a snack, don't forget portion control
